Orange & Chocolate Babka

Babka is definitely one of the trendiest and tastiest baked goods of the moment. This week, I suggest you test this amazing orange and chocolate babka to spice things up. I went for bitter orange and chocolate chips since these two flavours go so well together. Added bonus, the orange jam add some moisture to the babka and a subtle bitter sweet taste.

Ingredients
Dough
530 g flour (4 2/3 cups)
100 g sugar (1/2 cup)
1 tbsp yeast and 2 tbsp water
3 large eggs
60 g milk (1/4 cup)
60 g water (1/3 cup)
A pinch of salt
150 g butter soft (3/4 cup)
Some bitter orange jam (approx. 250 g)
Chocolate chips (approx. 150 g)
How To
Add in the water to hydrate the yeast, and mix.
In the bowl of a stand mixer, start by mixing all the ingredients together : the flour, sugar, yeast, eggs, milk, water and salt.
When the ingredients are combined, add in the soft butte little by little and mix.
Cover the dough with cling wrap and place in the fridge for a whole night or at least 6 hours.
Flour the work surface and spread the dough using a rolling pin.
Apply the orange jam and sprinkle some chocolate chips.
Roll the dough and cut it halfway.
Cross one side over the other and repeat until you're out of dough.
Split the dough in half to get two babkas and place them in a baking mould.
Let rise for an hour in a warm environment.
Bake at 165°C/330°F for 20 - 25 min.
